Key responsibilities:
- Manage training and development of the culinary team and to manage the F&B department in accordance with company/hotel policies and procedures.
- Hires, manages and trains staff in all technical and non-technical aspects of their role including Group standards of quality and service
- Identify market needs and trends in terms of food for the hotel clientele and specific
- To continuously seek ways to assist management in the outlets to maximise revenues and profit
- To ensure that only the freshest and highest quality products on the market are purchased for the outlets
- To develop menus, which meet the market needs and are unique to the market and meet Zannier Hotels standards and guidelines
- To monitor food standards in all production areas and to take corrective action when appropriate
- To ensure the departmental SOPs, Policies and Systems are kept up to date at all times, both on a local and generic global level
- To be fully conversant with local Hygiene, Health and Safety regulation in force and ensure total compliance with such regulations in all kitchens and associated areas
- To achieve the budgeted food cost of sales whilst maintaining the consistency of food products to meet the needs of the hotel’s outlets.
Minimum required experience:
- Tertiary Education in Culinary Arts
- Proven working experience of 12+ years’ working luxury hotel kitchens
- Excellent record of kitchen management at all levels from Demi Chef de Partie up to Executive Chef
- Excellent skills in training and leading kitchen staff and line cooks to prepare high quality food and plate according to high standards of Zannier Hotel Group
- Advanced knowledge in Financial Forecasting and F&B budget management
- Knowledge of planning a fine-ding menu and developing acquired food courses
- Experience in pricing of food and beverages according to the caliber of Zannier Hotel Group
- Innovative in developing cooking skills and techniques that allow kitchen staff to expand their skillset
- Fire Safety and First Aid Training essential
- Code B Driver’s license
Terms for position: Live out position and long working hours, 7 days a week.
