Food & Beverage Manager

Based at Ongava Game Reserve Reporting to the Operations Manager

Purpose of the Position:

The Food & Beverage Manager directs the overall food-service operation of Ongava group lodges including purchasing, preparation, nutrition , service, sanitation, security . personnel management, customer service, and record keeping.

Minimum Requirements:

• Grade 12 plus a Culinary Arts Qualification from a Reputable Institution
• Other related qualification will be an added advantage
• 2-4 years’ experience in a similar position
• Advanced knowledge of food professional principles and practices.
• Excellent communication skills
• Computer literate
• Namibian citizen? Domicile/ Work Permit/ Permanent Resident

Duties and Responsibilities:

• Ensuring promptness, freshness, and quality of dishes.
• Coordinating chef’s tasks.
• Implementing hygiene policies and examining equipment for cleanliness.
• Designing new recipes. planning menus, and selecting plate presentations.
• Performing administrative tasks, taking stock of food and equipment supplies, and doing purchase orders.
• Setting and monitoring performance standards for staff.
• Obtaining feedback on food and service quality, and handling customer problems and complaints.
• Plan, forecast and execute food and beverage orders.
• Plan alternative recipes for customers with special dietary needs.
• Check food and beverage supplies and place orders when needed.
• Menu development and food pricing
• Labour management and related cost control
• Development and training of culinary team
• Maintaining safety and sanitation standard of the kitchen
